Comparative Study of Physiochemical Properties of Different Brands of Vegetable Oil Sold in Ihiala Market of Anambra State

Objective: To compare the physicochemical properties of four brands vegetable oil sold in Ihiala market.
 Methods: The samples were brought from different super stores market and standard methods used to analyze various samples.
 Results: analysis showed that peroxide value, saponification values, acid ester value glycerol palm kernel (43.91 ± 0.01, 1234.20 74.14 38.56 0.02, 1195.60 0.01 65.40 0.02) is significantly higher than Lahda, Devon King’s Power P < 0.05. While iodine refractive index specific gravity (56.53 0.10, 0.26 0.91 0.01) other i.e Lahda Palm Kernel at There no significant difference (0.01 0.05.
 Conclusion: values iodine, peroxide, saponification, FFA, level could be attributed differences sources processing. However, nutritional composition still adequate for human consumption except which has highest above analysis.
